DANGKE is a typical food of Enrekang Regency. Made from buffalo milk and traditionally processed. This is a kind of cheese. Of course contains lot of protein. Dangke is scarce food because rarely found, even in Makassar City.
Dangke is buffalo milk which is processed become solid. Buffalo milk is made to be compact by providing the enzyme of papain derived from papaya latex. This enzyme functions to separate protein and water. Similar to the process of making cheese
Dangke can be directly eaten, fried, or baked. It's tasty and has a fragrance like parmesan cheese. In Enrekang, dangke enjoyed with mandoti Pulu. Food made of sticky rice.
Dangke can be enjoyed in Enrekang or in the surrounding areas such as Rappang (Sidrap) or Pinrang. Distance about 200 kilometers north of Makassar. You can buy dangke in way to Toraja.
